Menu Week 2/20/2012

This weeks menu has a few family favorites that are easy to make. I am still using my favorite Pioneer Woman Cookbook, some of my family recipes, and this week a true favorite for my family…the Pampered Chef Chicken Broccoli Braid!

I am most impressed with the recipes in The Pioneer Woman’s cookbook. Every recipe I have tried, my family has loved! They do take some time to prepare so I suggest doing your prep work on the weekend, or serve the meals on the weekend. Just a side note for busy working moms! There are a lot of Chicken Recipes this week, if you get crazy go ahead and cook your chicken for the spaghetti and broccoli braid so that you are that much further ahead when you get home from work during the week!

Monday- Chicken Spaghetti  This recipe I call my “Move in Recipe!” It is great to take over on moving day when you have a new neighbor! Yup, a dear neighbor in Tennessee did that for me one time!

Here is a list of Ingredients for you and you can click on the link above for the directions. Again you will see a photo from The Pioneer Woman site, I love to have a  photo of what I am making so I have provided one here. Please remember these are not my photos.

Ingredients

  • 2 cups Cooked Chicken
  • 3 cups Dry Spaghetti, Broken Into Two Inch Pieces
  • 2 cans Cream Of Mushroom Soup
  • 2 cups Grated Sharp Cheddar Cheese
  • 1/4 cup Finely Diced Green Pepper
  • 1/4 cup Finely Diced Onion
  • 1 jar (4 Ounce) Diced pimento, Drained ( I leave these out!)
  • 2 cups Reserved Chicken Broth From Pot
  • 1 teaspoon Lawry’s Seasoned Salt
  • 1/8 teaspoon (to 1/4 Teaspoon) Cayenne Pepper
  • Salt And Pepper, to taste
  • 1 cup Additional Grated Sharp Cheddar Cheese

Tuesday -Meatloaf 

MeatLoaf, Mashed Potatoes, Green Beans…Nuf said. YUM!

 

 

Wednesday-Slow Cooker Chicken and Dumplings

This recipe was given to me at work by a friend. I love it because it is easy and I can have it cooking when I am at work. Throw some veggies on and Whala! You are done!

Thursday-Chicken Broccoli Braid  My kids love this recipe and it is quick and easy. Prepare your chicken ahead of time, chop and you are ready to go when you get home!

Friday-All Day CrockPot Chicken and Potato Puff Casserole.

A crockpot chicken recipe with orange marinade. This chicken needs to marinate, so start very early in the morning or the night before. It is from the http://southernfood.about.com/ site which I have been looking thru. The Potato Puff Casserole is from the Taste of Home Casseroles Cookbook.
